ASPARAGUS
WITH LEMON BUTTER SAUCE
2 1/2 pounds asparagus
1/2 cup butter
1/4 cup orange juice
4 teaspoons lemon juice
1/2 teaspoon grated orange peel
1/2 teaspoon grated lemon peel
Break off asparagus stalks as far down as they snap easily.
Wash asparagus and cook, covered, in small amount of boiling salted water
until just tender. Drain. Melt
butter in small saucepan. Stir in orange juice, lemon juice, orange and lemon
peels. Heat to serving temperature,
stirring occasionally. Serve with
cooked asparagus. Garnish with
lemon slices, if wished. Makes
about 6 servings.
