PORK RIBS

The Best BBQ Sauce (see index)
2 teaspoons seasoned salt
2 teaspoons paprika
2 racks of ribs - approximately 8 pounds
Cook sauce according to recipe. Set
aside until you are ready to barbecue. When
the BBQ fire is ready, position the rack 3 inches above the heat source.
Sprinkle the ribs on both sides with the seasoned salt and the paprika.
Place the racks of ribs on the grill and sear the meat for 2 minutes per
side.
When the meat is seared, raise the rack 2 inches. Allow the ribs to cook for 15 minutes before turning them.
Once the second side has cooked turn them for an additional 15 minutes
before turning them again.
Allow the ribs to grill for 10 minutes more, then turn them one final time.
After another 10 minutes both sides of the ribs should have a crisp
glaze. The ribs will be done when a
sharp knife inserted between the ribs shows no pink meat.
Transfer the racks to a carving board, cut the ribs apart and pile them on
platters for guests to serve themselves, accompanied, by the sauce.
