1981 WORLD CHAMPIONSHIP BUTTERFIELD STAGELINE CHILI

4 medium onions, minced
10 pounds lean beef brisket, chopped fine
1/4 cup oil
1 1/2 cloves garlic, minced
2 pounds ground pork
1 7 oz can whole green chilies, minced
1 tablespoon ground cumin
1 teaspoon salt
1 tablespoon dry mustard
1 15 oz can tomato sauce
1 16 oz can whole tomatoes, chopped fine
1 oz tequila
1 12 oz can beer
2 3 oz bottles chili powder
2 beef bouillon cubes



Brown onions and beef in oil.  Stir in garlic, pork, chilies, cumin, salt, oregano, dry mustard, tomato sauce, tomatoes and liquid, tequila, beer, chili powder and bouillon cubes.  Bring to boil, reduce heat and simmer 2 to 3 hours, stirring occasionally.
Do not stir last half hour before serving.  Makes 20 to 25 servings.
