DUB'S CORN BREAD


DUB EGBERT

 

 

1 1/2 cups stone ground cornmeal
3 Tbs flour
2 Tbs sugar
3 tsp baking powder
1/2 tsp soda
1 tsp salt
1 cup buttermilk
2 eggs, well beaten
4 Tbs bacon drippings


Preheat oven to 375.  Place a cast iron skillet ( 9 1/2" x 9 1/2" square skillet or a 10 1/2" round skillet) in the oven for 5 to 10 minutes.  Combine the dry ingredients and stir in the buttermilk and eggs.  Pour drippings into the batter and stir.  Pour the batter into the cast iron skillet and bake for 30 to 35 minutes.  Check at 30 minutes with a knife.  Can be frozen.
