GARLIC SOY SAUCE


1 tablespoon salad oil
1 tablespoon minced fresh ginger
4 cloves garlic, minced
1/4 cup green onion, finely chopped
1/2 cup water
2 tablespoons soy sauce
2 tablespoons dry sherry
1 teaspoon sugar
1 teaspoon vinegar

In a 1 quart pan, combine salad oil, ginger and garlic.  Stir over low heat, just until garlic begins to turn light gold, 2 to
3 minutes.  Remove from heat.  Add green onion, water, soy sauce, dry sherry, sugar and vinegar; stir to mix.  Serve warm or at room temperature.  Makes about 3/4 cup.
