HARD BOILED EGGS

Make sure the eggs are not cracked.  Bring water to a slow boil.  Add eggs.  When water returns to a slow boil continue boiling for 10 minutes for small eggs, 11 minutes for medium eggs, 12 minutes for large eggs, and 13 minutes for jumbo eggs.  Add 1 minute to cooking time if eggs are cold, i.e. directly from the refrigerator (eggs do not have to be at room temperature).  When the eggs are done, slightly crack each egg and put the eggs into cold water for a few minutes.  Peel cooled eggs under running tap water.
