HOMINY
SOUP
1 ham hock
2 cups chicken broth
Water
16-oz can drained hominy
1-3 fresh green chilies, seeded and sliced
1/2 sweet red pepper, diced
2 cloves garlic, crushed
Simmer ham hock in chicken broth and enough water almost to cover for 2 hours.
Add hominy, chilies, red pepper and garlic. Simmer 1 hour.
Remove hock. Discard skin
and bone. Dice meat and return to
soup. Skim off fat and serve with French
bread or warm corn tortillas.
