LASAGNA

LOIS BURKE

1 pound meat ( 2 parts ground beef, 1 part Italian sausage)
1 clove garlic, minced
1 tablespoon whole basil
1 1/2 teaspoon salt
1 16 oz can tomatoes (2 cups)
2 6 oz cans tomato paste
10 oz lasagna noodles
3 cups fresh Ricotta or creamy cottage cheese
1/2 cup grated Parmesan or Romano cheese
2 tablespoons parsley flakes
2 beaten eggs
1 teaspoon salt
1/2 teaspoon pepper
1 pound Mozzarella cheese, sliced thin


Brown meat slowly, spoon off excess fat.  Add next five ingredients.  Simmer uncovered 30 minutes, stirring occasionally.

Cook noodles in large amount boiling salted water until tender; rinse.

Combine remaining ingredients, except Mozzarella cheese.  Place half the noodles in 13x9x2 inch baking dish; spread with half the cottage-cheese filling; add half the Mozzarella and half the meat sauce.  Repeat layers.

Bake at 375 degrees about 30 minutes.  Let stand 10 minutes before cutting in squares.  Makes 12 servings.

LASAGNA

1 lb hamburger
4 cloves garlic, crushed
2 6 oz cans tomato paste
1 28 oz can chopped tomatoes
1 Tablespoon sugar
1 1/2 teaspoon salt
3/4 teaspoon oregano
3/4 teaspoon thyme
1 bay leaf
12 lasagna noodles
2 eggs beaten
16 oz ricotta cheese
16 oz sliced mozzarella cheese

Preheat oven to 350 degrees.  Brown beef in oil.  Add garlic and sauté for a few minutes.   Add tomato paste, tomatoes, sugar, salt and the spices.  Slowly cook for 30 minutes.  Remove the bay leaf.  Mix the eggs and ricotta cheese.  Cook the noodles according to the package directions.  In a lasagna pan, make three layers of the tomato sauce, noodles, ricotta mixture and mozzarella cheese.  Top with tomato sauce.  Bake for 30 minutes. Let stand for 10 minutes.

EASY LASAGNA

DUB EGBERT

1/4 lb. Hamburger
1/4 lb. sausage
1 32 oz Pegro Spaghetti Sauce
1 1/2  teaspoons Basil
2 teaspoons minced garlic
1 teaspoon oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
14 oz cottage cheese
8 oz mozzarella cheese, grated or sliced
4 oz Jarlsberg cheese, grated
9 Lasagna noodles
                                                                                                                                                                                          
Cook lasagna noodles per package instructions  Brown the hamburger and sausage.  Add minced garlic.  When mixture is browned, add Spaghetti sauce, basil, oregano, salt and pepper.   Slowly simmer for 20 minutes.

Grease a 12" x 8" x 2" baking dish.  Place 3 lasagna noodles on bottom of pan.  Cover with 1/2 of the cottage cheese, 1/2 of the mozzarella cheese and 1/2 of the Jarlsberg cheese.  Cover with nearly 1/2 of the sauce.  Repeat.  Top with remaining 3 lasagna noodles and the remaining sauce.  Bake at 350 degrees for 35 minutes until bubbly.  Let set for 10 minutes before serving.
