MOZZARELLA MARINARA

Mozzarella cheese
Beaten egg
Flour
Seasoned bread crumbs
Parmesan cheese
Oil for frying
Marinara Sauce


Cut cheese into 3 x 2 x 1/2 inch pieces.  Dip into beaten egg, then flour and into egg again, then into seasoned bread crumbs mixed with Parmesan cheese (1 tablespoon Parmesan to each 1 cup crumbs).  Place breaded cheese in a single layer on a plate and
chill at least 30 minutes.  Fry in 1/2 inch hot oil until browned on one side, turn and brown the other.  Drain on absorbent paper. Serve with Marinara sauce.

 

MARINARA SAUCE

1/4 cup olive oil
1 clove garlic, minced
1 tablespoon minced parsley
1/2 teaspoon basil
2 cups chopped, peeled or canned tomatoes
1 teaspoon salt

Heat oil, add garlic and parsley and cook until garlic is lightly browned.  Add basil, tomatoes, salt and pepper and simmer 30 minutes.
