NUT CRUNCH

1 cup sugar
1 cup butter
3 tablespoons water
1 to 1/2 cups nuts
1/4 lb. melted semi-sweet chocolate
1/4 cup finely chopped nuts.

Cook sugar, butter and water rapidly and stir constantly for about 10 minutes or until the mixture reaches 290 degrees.  Add nuts.  Turn the candy quickly onto a buttered slab.  Form into a shape about 1-foot square.  When almost cool, brush with melted chocolate.  Before the chocolate hardens, duct with finely chopped nuts.  Break into pieces when cold.

NOTES:  Sliver large, dense nuts like almonds and Brazil nuts.  Others can be left whole.  You may add them at once to the mixture if you like a roasted quality in the nut.  If not, spread them on a buttered slab or pan and pour the syrup over them after cooking.
