PEACH CRISP


1 cup plus 2 tablespoons of flour
1 cup plus 1/2 to 3/4 cup sugar
1 tsp baking powder
1/2 tsp salt
1 egg, beaten
5 - 6 cup sliced fruit
1/4 lb butter, melted

Stir together 2 tablespoons flour and 1/2 cup to 3/4 cup sugar.  Toss with fruit.  Spread mixture in 8-inch un-greased baking pan.  Stir 1 cup flour, 1 cup sugar, baking powder and salt.  Make a well in the center and add the beaten egg.  Stir with a fork until crumbly.  If too dry, add more egg.  Sprinkle mixture on top of fruit and drizzle with butter.  Bake at 375 degrees for about 40 minutes.
