POTATOES ANNA

3 large potatoes
2 tablespoon clarified butter (or 2 tablespoon oil and 2 teaspoon butter)
Salt, Pepper

Peel potatoes and cut into 1/16-inch thick rounds.  Place in cold water.  Place 1 tablespoon clarified butter in bottom of heavy cast-iron skillet.  Set skillet on a burner turned on high.  Working quickly, pat potato slices dry with paper towels and line skillet with overlapping slices, starting in the center.  Dribble some of clarified butter over top. Season to taste with salt and pepper.  Repeat, making three layers.  Remove from stove; bake at 425 degrees 40 minutes.  Raise heat to 500 degrees.  Bake 10 minutes longer.  Let stand 5 minutes.  Loosen potatoes by running spatula underneath.  Makes 2 servings.
