SOPAIPILLAS

2 cups sifted flour
2 teaspoons baking powder
1 teaspoon salt
2 tablespoons shortening
1/2 cup water
Oil for deep frying

Resift flour with baking powder and salt.  Work in shortening and water.  Mix into a soft dough.  Roll out into a thin rectangle on a floured board and cut into diamonds.  Heat oil in a skillet to 400 degrees.  Add a few sopaipillas at a time, pushing them under the oil two or three times to assure even puffing.  Cook on both sides until browned.  Drain on paper towels.  Serve hot with honey or jam.  Makes about 20.
