SUPER BEAN SOUP

DUB EGBERT

 

1 pound white dried beans
1 medium onion
16 oz. chicken stock
16 oz. beef stock
1 teaspoon salt
1 teaspoon pepper
5 cups water
1/4 pound salt pork or bacon
1 stalk celery, coarsely chopped
1 cup white wine


Wash beans.  Place beans and salt pork in water, bring to a boil, cover and then slow simmer for 1 hour. Stir occasionally. Add quartered onion, stocks, and celery.  Bring to a boil, cover and then slow simmer for 1 hour.  Stir occasionally.  Add salt, pepper and white wine and simmer for an additional 20 minutes.
