TEXAS CHILI

4 lbs lean beef, cut into 3/8 to 1/2 inch cubes
10 tablespoons oil
1 small onion, diced
3 ounces Texas or New Mexico chili powder
4 to 5 tablespoons cumin
Dash salt
Dash pepper
1 tablespoon garlic salt
1 (15 ounce) can beef broth
1 (8 ounce) can tomato sauce
1 (12 ounce) can beer or 1 1/2 cups water


Brown beef in 6 tablespoons oil in large pot.  Cook onion in remaining oil until tender but not browned.  Add onion, chili powder, cumin, salt, pepper and garlic salt to meat and simmer 10 minutes.  Add beef broth, tomato sauce and beer.  Cover and simmer until meat is very tender, 2 to 3 hours.  Uncover last half hour.  Stir as chili thickens and add more beer or water if needed.  Makes 1 gallon, or 12 to 16 servings.
