TURKEY
VEGETABLE SOUP
6 to 8 servings
1/4 cup (1/2 stick) butter
2 medium onions, chopped
2 tablespoons all purpose flour
1 teaspoon curry powder
3 cups chicken broth or turkey broth
1 cup chopped potatoes
1/2 cup thinly sliced carrots
1/2 cup sliced celery
2 tablespoons chopped fresh parsley
1/2 teaspoon sage or poultry seasoning
2 cups cubed cooked turkey
1 1/2 cups half and half
1 10 ounce package frozen chopped spinach
Salt and freshly ground pepper
Melt butter in large saucepan over medium-high heat. Add onions and saute until translucent, about 10 minutes.
Stir in flour and curry powder and cook 2 to 3 minutes.
Add broth, potatoes, carrots, celery, parsley and sage and bring to boil. Reduce heat to low, cover and simmer 10 minutes.
Add turkey, half and half and spinach.
Cover and continue simmering until heated through, about 7 minutes.
Season with salt and pepper.
