TURKEY CHILI

DUB EGBERT


1 lb. lean ground turkey
1 large onion, chopped
1 green bell pepper, coarsely chopped
2 tablespoons minced garlic
5 tablespoons chili powder
2 teaspoon cumin
1 teaspoon oregano
1 1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cayenne
2 bay leaf
28 oz. can chopped tomatoes
1 10 oz can beef broth
2 16 oz cans kidney beans

Crumble the ground turkey and brown in some oil.  Transfer to chili pot.  In additional oil, sauté the chopped onions for 2 minutes; add chopped green pepper and garlic.  Continue to sauté until soft.  Transfer to chili pot.  Add spices to meat and onion mixture and mix.  Add tomatoes and beef broth.  Bring to a boil, reduce heat and simmer for 30 minutes.  Add additional water or beef stock if chili gets too thick.  Correct spices if necessary.  Add beans, bring back to a boil and simmer for 30 minutes.  Remove bay leaf.
