Add up to 30 minutes extra cooking time for a stuffed turkey.

Insert thermometer in the breast - to not touch any bone.  when no thermometer is used, the thickest part of drumstick should feel soft when pressed with thumb and forefinger and drumstick or thigh should move easily.  Turkey is done when internal temperature reaches 170 degrees.

This is ideal for the breast; if the thigh meat is pink, cut off the thighs and continue to cook the thighs (at 450 degrees) while your carve the breast.

Allow 3/4 lb raw turkey for one serving (unless your feeding hogs, then allow 1 lb per person)

Let turkey stand 20 to 40 minutes before carving.
