CHILI
VERDE

2190 Calories
2 large onions, chopped
4 tomatillos, chopped
2 bell peppers - one green,
one red
1 large green chili - or 8 oz. can of Ortega whole green chilies
1 or 2 Jalapeno chilies
1 cup white wine
1 cup water
1/2 teaspoon oregano
1/2 teaspoon thyme
1/4 teaspoon cumin
2 teaspoon salt
1 teaspoon garlic juice
1 pound pork
1/2 pound stew beef
Cut bell peppers into 1 inch strips. Cut
green chilies into 2 inch strips.
Combine onions, tomatillos, peppers, green chilies, spices, white wine,
and cup of water in large pot and start to simmer.
Add diced Jalapenos. (Two small
Jalapenos will make it quite hot.)
Cut meat into large cubes, flour, and sear in oil. Add meat to pot, cover and simmer for two hours or longer
until meat is tender. Adjust seasonings.
Add water as it cooks if necessary. Skim
off fat.
Serve with rice or beans and tortillas.
