ZABAGLIONE
SAUCE
TRANQUILLA FREY
4 egg yolks, slightly beaten
1 cup powdered sugar
dash of salt
1/4 cup sherry
3/4 cup heavy cream, whipped
Combine egg yolks, sugar, salt and sherry in top of double broiler.
Cook over simmering water, stirring constantly, for 8 to 10 minutes or
until mixture thickens. Remove from
heat; cool. When ready to serve, fold in whipped cream.
Serve over drained, chilled fresh poached or canned pears or other fruit.
